Dinosaur Bar-B-Que - Syracuse, NY
Dinosaur Bar-B-Que opened in Syracuse, NY in 1988. The first time I ate there, was in the early 2000's, shortly before I moved to the west coast. Starting as a biker bar, it is now a nationally acclaimed restaurant with 9 spread around the Northeast, so it has grown a lot. I know from experience, that the Syracuse branch can be very crowded.
However, on the Monday after Thanksgiving for lunch, it was pretty easy to get a table. We had the Carolina pulled pork sandwich with coleslaw, fried catfish strips, and the 3 meat combo platter with brisket, ribs, and chicken, collards, and coleslaw. I always enjoy a pulled pork sandwich, and this one was very satisfying, tender and creamy with the coleslaw on top. However, I think that my most favorite part of the whole lunch was the collards. It's highly possible that when I first visited Dino Bar-B-Que, I didn't even know what collards were and I would not have ordered them. But I know what they are now, and these were particularly tender and flavorful. Something to look forward to on my next visit.
