Takibi
Takibi caught my attention right away when it opened, it turns out it is Japanese for bonfire and it’s also inside Snow Peak, a Japanese outdoor lifestyle store, on NW 23rd. I’d been wanting to go there for awhile, when we finally went to dinner in March.
The cocktails were super creative and I selected the Warbler made from Suntory Roku Gin, Banks 5 Island Rum, Campari, Cherry Blossom, Rhubarb, Commissary Orgeat, and Lime Juice.
Takibi was first announced as a coming attraction back in January 2020 and it took a bit for it actually to open, but it finally did and then of course, it took me awhile to go there. I believe the chef and menu changed once (or more?) prior to my visit in March 2022.
The menu is broken into different preparations and from the small plates portion we started with tsukemono, which turned out to be a very pretty bowl of pickles, and beet salad, which was made with golden and red beets with a creamy dressing.
From the raw menu, we selected Shio Koji marinated sea bream, very pretty plating with a pretty mild flavor.
And albacore warayaki.
I can’t resist fried chicken, so I couldn’t pass up the crispy karaage.
We selected black cod from the grilled menu.
Throughout the meal, the courses were specifically spaced out and most of our selections came close together, but the soba was specifically the last delivered to our table. So our last course was soba noodles in a super flavorful with vegan dashi, shiitake, king trumpet, and tofu.
