Guero

I love sandwiches and from the first time I ate at Guero, I knew that it would be one of my favorite sandwiches in Portland.  Guero is a food truck in a small food cart pod on SE 28th.  They have a small menu of tortas and bowls and my favorite sandwich is the pollo pibil torta.   I have tried the other two tortas, the carnitas and refrito, but I think the pollo pibil is the best one.  The meat is tender and flavorful, and the other toppings, onions, cabbage, and avocado go very well together with the crispy soft bread.   I always get the additional cotija cheese and they have a carrot habanero salsa available to add to anything.  The sandwich is pretty massive, and could easily be shared, but I usually can eat the whole thing with no problem.
